The Longest Wait


Some things in life seem to take forever, like Christmas, vacations and waiting for tomatoes to come into season.

I’ve worn a path to the garden to watch for enough tomatoes to make my first pie…well, truth be told, I did succumb to a couple of tomato sandwiches before carrying an apron full of tomatoes to fill the waiting pie shell.

I take the easy route and use a ready-made piecrust. My mother rolled her own delicious crust for savory and sweet pies and I still feel a little less Suzy homemaker each time I slip the store-bought crust from the freezer.

If you don’t have a garden there are plenty of roadside stands with the beautiful red orbs waiting to be had. I love to visit the vegetables stands with all their colors and textures displayed like a summer painting.

Enjoy this recipe because the tomatoes will be gone soon, at least here in the western mountains of North Carolina, and the longest wait will be on again.

SAVORY TOMATO PIE
(Recipe from a neighbor…origin unknown)

Ingredients:

1 9-inch pre-baked pie shell (mum is the word)
½ cup chopped onion (I use yellow)
3 cups chopped tomatoes (I cut tomatoes in half and squeeze excess juice before chopping)
½ teaspoon salt (kosher)
¼ cup sliced basil
2 cups grated cheese (combination of sharp cheddar and Monterey Jack)
½ cup mayonnaise
1-teaspoon hot sauce
Ground black pepper (to taste)

INSTRUCTIONS:

1.      Preheat oven to 350 degrees F. Pre-bake pie shell until golden brown. Follow package directions.

2.      Squeeze as much liquid from tomatoes as possible. Lightly salt and place over colander while crust bakes.

3.      Place a layer of chopped onion over piecrust bottom. Spread the chopped tomatoes over the onion. Place sliced basil over tomatoes.

4.      Mix, in a medium bowl, the grated cheese, mayonnaise, hot sauce, and sprinkle of black pepper. Spread this mixture (will be gooey) over the tomatoes.

5.      Place in oven and bake until browned and bubbly.(anywhere from 25-45 minutes.)

I vote for the dish of vegetables, seasoned with love, every time!

  2. Hi sweet lady! I have had you all heavy on my mind.....but no kidding, just returned from the garden with hubby to pic tomatoes and I was trying to think what "new" something I could make with them. Yes, I have tomato-sandwiched myself much more than I should have already....:)
    But this looks like another wonderful way to enjoy God's rich bounty!
